Cooking Directions
Prepare rice according to package directions.
Heat oil in a medium skillet over medium heat. Sauté shallots 2 minutes. Add chicken and sauté until no longer pink, about 5 minutes. Add peas, carrots, corn and parsley. Sauté 1 minute. Fold mixture into prepared rice.
