Parsley and Tomato Salad

For the Salad:
1 cup Mahatma® White Rice
2 cups cherry tomatoes, halved
1 cup parsley, chopped
1/2 cup chopped red onion
1/4 cup chopped fresh mint leaves
1 tsp finely grated lemon zest
Greek black or green olives, optional
For the Dressing:
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1/2 tsp salt
1/4 tsp freshly ground black pepper

Cooking Directions

Prepare rice according to package directions.

In large bowl combine cooked rice with all salad ingredients; set aside.

In 1-cup glass measure, place all dressing ingredients; mix well.  Pour dressing over rice mixture; mix well. If desired, garnish with olives.
