Ingredients

1 cup Mahatma® Jasmine Rice
1 lb peeled, cooked shrimp
1/2 cup sweet pickle relish
2 Tbsps lemon juice
1/4 cup onion, chopped
1 cup celery, sliced thin
1/2 cup mayonnaise
1/2 cup sour cream
1/2 tsp salt
1/4 tsp ground black pepper
8 each Romaine lettuce leaves, coarsely sliced

Cooking Directions

Prepare rice according to package directions; cool. Combine all ingredients except lettuce. Serve over lettuce.
