Cooking Directions
Combine rice, espresso powder and 2 cups water in a medium sauce pan. Bring to a boil, stirring occasionally. Reduce heat, cover and simmer 20 minutes. Add milk and sugar. Cook over low heat, stirring occasionally, 20 minutes. Add 1/2 cup pudding mixture to egg yolks, whisking constantly. Add mixture back to rice pudding and cook, stirring constantly for 1 minute. Remove from heat and stir in vanilla and chocolate chips.
Serve garnished with whipped cream and coco powder, if desired.
