Prepare rice according to package directions. When rice is ready, add milk, salt and sugar. Bring to a boil, stirring frequently. Lower heat and simmer 15 minutes, stirring occasionally.
Add 1/2 cup hot pudding to eggs and stir well. Pour egg mixture into remaining pudding. Cook, stirring constantly until pudding thickens, about 1-2 minutes. Remove from heat and stir in butter and liquor.
Serve topped with hazelnuts and garnish with mint, if desired.
