Cooking Directions
Preheat oven to 350°F.
Bring milk to boil; stir in rice and salt. Cook over hot water in a double boiler until milk is absorbed, about 30-minutes. Beat egg yolks with sugar and cream. Combine with rice mixture. Add raisins, if desired. Pour into baking dish. Bake for 15 minutes, until top browns.
