Cooking Directions
Preheat oven to 350º F. Prepare rice according to package directions. Combine ricotta and basil in a medium bowl; stir in cooked rice, corn, and pepper. Stir mixture into a 1-quart baking dish coated with cooking spray. Bake for 20 minutes or until thoroughly heated.
Cheesy Vegetable Rice Stuffed Tomatoes:
Prepare rice mixture as directed above. Cut tops from 8 medium tomatoes; scoop out pulp, leaving shells intact. (Reserve pulp for other uses.) Place shells upside down on paper towels to drain. Spoon rice mixture into tomato shells. Place stuffed tomatoes in a shallow baking dish. Bake 20 minutes.
