1 cup Mahatma® Jasmine Rice or Mahatma® White Rice
1 3/4 cups chicken broth
2 fresh red chilies, seeded and chopped
1 tsp sesame oil
1 tsp fish sauce, optional
1 Tbsp fresh ginger root, minced
1/8 tsp ground turmeric
1 Tbsp lime juice
1/4 cup roasted peanuts, chopped
1/4 cup green onion, sliced
1/4 cup fresh cilantro leaves, chopped

Cooking Directions

In a medium saucepan, combine rice, chicken broth, chilies, sesame oil, fish sauce, ginger root, and turmeric. Bring to a gentle boil. Cover. Reduce heat to simmer for 15 minutes. Fold in lime juice, peanuts, green onions and cilantro. Serve immediately.

Recipe Tip:  Do you have a rice cooker?  To prepare this dish ... Add all ingredients except lime juice, peanuts, green onions and cilantro, stir well to mix ingredients.  Cover and cook until rice cooker shuts off.  Carefully remove cover.  Gently stir in lime juice, peanuts, green onions and cilantro.
