Cooking Directions
Prepare rice according to package directions.
Heat oil in large heavy skillet over medium heat. Add onion and curry powder; stir well and cook until tender. Stir in sausage and broth; simmer 5 minutes. Stir in beans; cook until hot; stirring constantly. Remove from heat and stir in vinegar. Spoon over rice. Garnish with cilantro, if desired.
To Microwave: Combine oil, onion, and curry powder in 2 to 3 quart microproof baking dish. Cook on HIGH 2 minutes or until onion is tender. Add sausage, broth, and beans; cover with plastic wrap and cook on HIGH 5 to 6 minutes, stirring after 3 minutes, or until thoroughly heated. Continue as directed above.
