Dulce De Leche Rice Pudding

1 cup Mahatma® White Rice
2 cups water
1 cinnamon stick
1/4 cup sugar
2 cups milk
1 cup dulce de leche
2 egg yolks, slightly beaten
whipped cream, if desired
toasted slivered almonds (optional)
ground cinnamon (optional)

Cooking Directions

In a medium sauce pan combine rice, water, sugar and cinnamon stick and bring to a boil.  Reduce heat, cover and simmer 20 minutes.  Discard cinnamon stick.  Combine milk, egg yolks and dulce de leche and stir into rice.  Simmer over low heat 20 minutes, stirring occasionally, until thick and creamy.  Serve warm topped with whipped cream almonds and cinnamon, if desired.

Note:  Dulce de leche is a Latin America caramel sauce available at most supermarkets.
