Prepare rice according to package directions. Cool.
Coat a 2-quart microwave-safe serving dish with non-stick cooking spray.
In a large bowl combine cream cheese, garlic and nutmeg. Beat until light and fluffy. Stir in rice, spinach and ¾ cup cheddar cheese. Spread mixture into prepared dish. Top with remaining cheddar cheese. Microwave 4 minutes, or until cheese is bubbly. Serve hot with crackers or chips.
