Sriracha Ranch Rice Dip

1 cup Mahatma® Jasmine Rice, uncooked
1 Tbsp olive oil
1 cup frozen corn
2 cups ranch dressing
1/4 cup sriracha hot chili sauce
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 bowl pita chips or crackers

Cooking Directions

1. Prepare rice according to package directions. Cool.

2. In a medium saucepan heat oil over medium heat. Add corn and saute until corn begins to brown, about 3 minutes. 

3. In a large bowl combine ranch dressing and sriracha. 

4. Fold in rice, corn and bell peppers. Serve with pita chips or your favorite cracker or chip.
