For the Salad:
1 cup Mahatma® Whole Grain Brown Rice
For the Dressing:
1/2 tsp fresh dill
1 tsp minced garlic
1/4 cup red onion, chopped
2 lemon juice
3 Tbsps olive oil
salt and ground black pepper, to taste
1 lb small boiled shrimp, cleaned and peeled
15 cherry tomatoes, halved
1/4 cup sliced ripe olives
1/4 cup red onion, thinly sliced
2 oz reduced-fat feta cheese, crumbled

Cooking Directions

DRESSING Combine all ingredients in a food processor or blender. Blend until ingredients are smooth. Prepare rice according to package directions. Cool.

SALAD In a large salad bowl, combine rice with remaining ingredients. Fold in salad dressing. Toss.
