Chicken and Rice Stir-Fry with Vegetables

Ingredients

3 cups cooked Mahatma® Whole Grain Brown Rice
2 Tbsps butter
3/4 lb boneless skinless chicken breast, cut into thin strips
1 Tbsp minced garlic
1 Tbsp fresh ginger root, grated
1 cup snow pea pods, sliced diagonally
1 red bell pepper, thinly sliced
1/2 cup carrot, thinly sliced
1/2 cup water
1 Tbsp cornstarch
2 Tbsps low sodium tamari or soy sauce
1 Tbsp toasted sesame oil (optional)

Cooking Directions

Heat butter in a large wok or skillet over high heat. Quickly stir-fry chicken, garlic and ginger until chicken is no longer pink, about 3 minutes. Add snow peas, bell pepper and carrots. Stir-fry 2 more minutes.

Combine water, cornstarch and tamari sauce in a small bowl. Make a well in the center of the wok and pour in tamari mixture. Bring to a boil, stirring constantly, until mixture thickens.

Add cooked rice and toss chicken, vegetables and sauce until well combined and heated through. Serve drizzled with sesame oil, if desired.
